Smashed Potatoes with Sage Pesto
Prep Time: 20 minutes
Cook Time: 30 minutes
12 small-medium sized cooked cold potatoes
1/4 cup sage, just the leaves
2 sprigs of rosemary, just the leaves
1 tbsp KOVE SEA SPICE
1/3 cup roasted walnuts
Zest of one lemon
1-2 tbsp lemon juice
1-2 tbsp nutritional yeast
1-2 garlic cloves
1/2 cup extra virgin olive oil
Preheat the oven to 440 degrees F
Using a baking sheet, brush a little oil under each potato, then using a potato masher gently squash the potato. Brush the tops of the potatoes with a little oil and bake for 30 minutes. Serve warm, with a sprinkle of SEA SPICE and a drizzle of sage pesto.
Sage Pesto Directions:
Add all ingredients except for oil to a small food processor and blitz until chopped. Slowly add the oil and pulse until combined.
